What are your thoughts on paleo baking? Using almond meal and or coconut flour? I have been making a tart crust and filling it w/ egg, tons of veggies & chicken. There are a ton of cake / cookie recipes out there also. Thinking about the holidays.

I used to love baking...before I was paleo. In fact, I used to view baking as my form of artistic expression, often baking cakes, cookies, muffins, in all sorts of permutations from vegan, to gluten free to traditional.
BUT when I started following the Paleo diet, I really lost all desire to bake anything anymore. Now, my cooking is my art!
I personally don't do desserts very often but if I do prep a Paleo dessert here or there, it's usually more along the lines of a no-sugar-added homemade sorbet or a baked apple with cinnamon!
That said, if you opted to bake something similar to what you mentioned above, using almond meal, coconut flour, eggs, all of which are paleo (as long as they have nothing added), I don't see any reason why not to include them on your Paleo Thanksgiving Table!
It's actually probably a good idea to do so, in order to show any nonPaleo guests that it's NOT all about eating sticks, leaves and raw meat, as some think!
That apple looks amazing! Sometimes I slice an apple and sprinkle it with cinnamon and microwave for a little bit. Awesome pre-workout snack

Totally agree.
Crazy to think the traditional recipes tells you to stuff it with two or three tablespoons of butter and flour! Why?

I love this apple idea and any kind of fruit based dessert, if dessert is going to be had. I have to agree with you, Nell, that since changing my diet over to Paleo, my cravings for baked goods and sweets have just literally vanished. And I used to bake all the time! In fact, I even had a small bakery (in or former life) where I spent my days and nights making baked goods that tasted nice, but would rob you of energy... I can't beleive how I used to cook! Now I want to prepare foods that will give energy instead of take from it. Eating Paleo has changed my diet and energy in so many positive ways that the thought of cakes and rolls practically makes me cringe. Yes, my family doesn't believe it either but they see the dramatic difference.

Im the same. Not remotely interested in cakes, cookies and pies anymore... not to bake and DEF not to eat!!
