So many options! Which are the best? Which one(s) should you eat and which shouldn't you?
Have ALL of them and DON'T omit any... except for those products which have been tainted (as in: chemically altered or mixed with strange additives like these two examples):
Coconut, Sugar, Water, Propylene Glycol (Preserves Freshness), Salt, Sodium Metabisulfite (Retains Coconut Whiteness).
or this:
Ingredients: Coconut Milk, Guar Gum (An Emulsifier). Product of Thailand.
DO try:
As well as organic, FAIR TRADE, unrefined coconut oil, coconut butter, plain coconut water and fresh coconut milk/cream if you can find it near you.
I am a HUGE coconut lover and do enjoy some, in one of its natural forms, nearly every single day.

I was super excited yesterday when I found fresh coconuts here at my local indoor farmer's market (in Delaware). I had some fresh coconut slices at a breakfast buffet in El Salvador and thought it was the best Paleo snack ever! So I bought two yesterday and they are hanging out in the fridge. Questions: How do you know you are picking a good one and how do you cut it open? thanks :)

Im old-school when it comes to opening the coconuts- outside with a hammer! : )
I like the young coconuts the best. A vendor at a farmers market once told me to shake them and listen for the sound of the liquid sloshing around inside, which is a good sign that one is a winner!

It takes some serious searching to find organic unsweetened coconut! I will do without before I will buy that sweetened, tainted junk food!
