Many, many blog readers and twitter followers are beyond bummed when they learn that canned coconut milk is a no-go as it almost always contains guar gum, which is a bean derivative and potent source of saponins.
I'm spoiled here in Los Angeles with a teeny little shop that actually sells fresh coconut cream and coconut milk, in a glass jar, much like the way I imagine it would have been back in the day when having dairy milk delivered to the home was the norm!
While there is an easy method to make coconut cream and milk using reconstituted dried, shredded coconut, I am so happy to have a referral source for the actual thing, thanks to a reader!
Let's Do Organic Brand makes a product called Cream Coconut and the ingredients are...coconut!
Check it out and let me know what you think!
where is this little store located?

The one I WAS going to is Rawsome, near Lincoln Rose in Venice, until they were shut down... argh!
Have you tried making the coconut milk by reconstituting dried, shredded coconut? Here is a post on that subject:http://stephenson.typepad.com/train_with_nellie/2010/07/coconut-yogurt-recipe-thanks-to-one-of-my-readers.html

Hey Nell! What do you think about the Tropical Traditions products? Especially their Coconut Cream Concentrate? I love to mix it with almond butter or drizzle a little on yams or butternut squash!

Nell- My go to brand for "canned" coconut milk is Aroy-D 100% Coconut Milk available in a Tetrapak. It’s free of all additives and BPA. We found some at a local (Bay Area) Asian grocery store but have mostly purchased it online here: http://www.philamfood.com/AROY-D-COCONUT-MILK-8.5OZ.html
The TetraPak UHT process involves heating these to 284 degrees for 10 seconds. Do you know if "Let's Do Organic" also does this? Obviously, not as perfect as fresh DIY but much better options than anything you usually find at the store. Thanks for sharing this brand will have to look for it.

I just bought some of Let's Do Organic creamed coconut and I am curious what you do with it. I would like ot use it in a veggie dish somehow. Any suggestions?

Oh, the possibilities are endless! The first thing, off the top of my head, if you want to do veggies is perhaps a coconut curry dish. Have you tried the recipe in my book?
