I created this dish to use during the holidays in lieu of that awful 'sweet potato and marshmallow' thing that I've heard people sometimes have as part of their holiday fare.
Yes, the holidays are over, BUT, we athletes still need our yams (or sweet potatoes, depending on what part of the world you live in!)
Here's an EASY to prep dish for Friday nights when you've got a long bike and run the next day, for example!
Bake yams in a dish of water until soft.
Let sit until cool enough to handle, then remove skins:
Then, mash with a fork, add some olive oil and keep mashing until smooth.
Meanwhile, slice some golden delicious apples and saute in olive oil with rosemary:
Then, layer the apples on top of the yam. Finish off with some freshly toasted pecans and you'll have a great option for starch to fuel those long endurance sessions!
Sounds lovely.
Eat cold with apples raw, or heat the whole dish? Or either?

Do you know the "story" where the daughter always cut off the ends of her ham before baking and when someone asked her why she did that she replied that it was what her mom did; when asked of the mom, she said it was what HER mom did; when asked of the grandmother, she said it was because the ham didn't fit in her oven without her cutting the ends off. :) Point being.....I've never cooked my swt pots in a dish of warm water...just threw them in the oven in a pan after poking a few holes in them.
So are all of your potatoes submerged (I see one on top not) or is there just a little water in your dish? Also, what temp and how long? My potatoes don't look nearly as lovely without their skins as yours do. :)

Most of the water evaporates while cooking.
I bake them at 450 for 45-60 mins or until theyre soft...
They come out moister than if they were baked in foil.

I cook my yammies in a pressure cooker - very quick and tasty. So quick I can make them one or two at a time (that way, I don't eat them all!).

Chris, how do you cook them in a pressure cooker? That would def save me for when I realize it is 3 pm an the day has gotten away from me and haven't cooked any sweet potatoes.
