Here it is- the most decadent thing you'll find a recipe for on my Paleo Blog- so enjoy! I use these as a parting gift for my guests when they leave after our annual Christmas Fete.
I've taken a recipe that I found online and (as a reader put it) Paleo-ized it!
½ cup raw cacao nibs, ground, plus a little extra for dusting
¼ cup coconut oil
¼ cup coconut butter
¼ cup creamy roasted almond butter
¼ cup honey
-Combine cacao, coconut oil, coconut butter, almond butter & honey.
-Stir ingredients until well combined
-Place bowl in freezer for 10'
-Roll into 1 inch balls
-Roll in the extra ground nibs
-Place in tiny foil candy cups and then into a box for presentation

ROLLING IN GROUND CACAO
(*Make sure to keep any beggars away from your product! : )
OH MY GOSH! LOVE IT! Where do you get the raw cacao nibs? WF? LOVE LOVE LOVE the "beggars"....so cute.
A question for later: are chestnuts (not water chestnuts) Paleo? I saw them at Trader Joe's and was wondering what to do with them? My husband is from France and they eat them all the time in the winter.

Yes, the beggars (aka our dogs) are always
on the lookout for any food that might drop on the floor!
I believe chestnuts are fine to eat; Ill do a bit of investigating
and let you know if Im mistaken!

I am. We are doing the traditional French feast of a seafood platter - oysters, shrimp, crab, lobster, mussels, clams. Followed by one of your fall salads with pears, avocado and pecans; brussel sprouts and kale chips (which do not really go with the meal but I have to have them!), cheese course (but that's not my gig - my mother in law has to have her french cheese), baked apples stuffed with walnuts and dried fruits and recently added: your Paleo pumpkin mousse. If I have time, tomorrow I will attempt the truffles. I think I'll be MAKING the time. :-)
How many people are coming to your dinner?

The seafood sounds great!
We are hosting dinner for ten; small this year.
Our biggest was in 2008 when I cooked Paleo
for 65- so much fun! :)
The truffles are easy and a must-do...let me
know how they go, as well as the rest of the Christmas meal!
