Friday was quite a day, attending and speaking at the Ancestral Health Symposium was an honor. Typically, I address groups that are learning how to do Paleo, or athletes or those relatively new to the lifestyle.
Yesterday... not so much! I LOVE speaking publicly about Paleo, but I must admit that at the beginning of the symposium, I felt a little bit of what I cannot liken to anything else besides race day jitters!
All good- that only meant it was very important to me, and that it would go well. That's the theory that I apply to myself in racing, so why not in other important events, right?
I so enjoyed speaking with Dr. Cordain as we'd not seen one another since before the cookbook! It was also fantastic to meet many of the people in person that are esteemed experts in the Paleo world, including Boyd Eaton, Pedro Bastos and Robb Wolf.
My favorite bit, though, had to be meeting so many of you who follow my blog and tweets- THAT was more than inspiring and I thank you so much for continuing to read, engage and keep educating those around you about how they, too, can easily adapt our Paleo Lifestyle!
You provide so much valuable information and great inspiration. Thank you so much for posting daily with great insight and ideas!
Can you explain why chia seeds are not paleo but flax oil is?
Also I have so many peas in my garden- it is hard to believe that these shouldn't be in my meals. Are they ok to eat if I am doing lots of activity?

Glad youre enjoying the blog!
Chia seeds have a very high level of saponins in their husk, which wreaks havoc on the guts and like all other anti nutrients, contributed to intestinal permeability, inflammation and infection systemically.
For the same reason, legumes are also avoided on the Paleo diet, which includes peas, all beans (including soy and peanuts).
Focus on the ALL veggies and fruit- there are endless combinations!
Flax OIL is a great source of Omega 3 fatty acids, and since were not eating the outer covering, any antinutrient properties that may have been an issue becomes void.

Hi Nell. It was very nice to finally meet you and you gave a very nice lecture.
Unfortunately, I was a bit stressed because of my own lecture and terribly jet lagged, so I didn't quite mingle with people as I wanted to.
I hope to see you again in the next AHS.
All the best
Pedro

It was great to meet you in person, too!

Nell's Presentation at Ancestral Health Symposium is now available online here
http://vimeo.com/27659303
and very good it is too.
The slides that went with the presentation may become available later here
http://www.slideshare.net/ancestralhealth/presentations
They are hoping to marry the slides with the presentations but that will take time, so initially they are putting up the videos and the slides separately at first. (To satisfy the impatient people like me)
I've found that by using my laptop for the slides and the PC for the video I can manage fine with this system.

Sorry to have to tell you there's been a hitch and your video has gone. Fortunately for me I was able to watch it while it was up but now a message says
Sorry, "Nell Stephenson: Paleo eating in practice" was deleted at 1:06:08 Sat Aug 13, 2011.
I live in the UK and wasn't able to attend AHS11 but some of the slides/video's I've seen so far have been very technical and while the science is very interesting for some it's not very accessible for many.
I felt your talk was a good practical introduction for someone just starting out on trying to improve their health/diet/lifestyle. It's important if we want to do something to slow/halt the looming obesity/diabetes/cancer/alzheimer's crisis to offer simple guidance ORDINARY people (not the dedicated/obsessive) can follow without too much trouble.

Precisely; that is what my focus is to the tee!
My next book will cover that in great detail.
